Video Recipe – Cold smoked salmon, capers, salted red onion and Smoked Salmon Pearls
- 1 packed cold smoked salmon (sliced)
- ½ red onion – sliced thin
- 20g baby capers in brine
- 1 orange – segmented
- Finely chopped chives
- Fresh dill
- Extra Virgin olive oil
- Zest of ½ lemon
- 50g Smoked Salmon Pearls
- Olsson’s Redgum smoked salt
Finely slice the red o ion, and sprinkle with Olsson’s Redgum smoked salt and olive oil. Allow this to set aside and soften (10min)
Arrange the cold smoked sliced Salmon on the serving plate. Dress liberally with olive oil, and the zest of lemon on a fine grater.
Scatter with baby capers, orange segments, finely chopped chives and dill. Finally add the salted red onion and the Smoked Salmon Pearls.
