Sustainability

Protecting Our Waters. Respecting Our Fish. Preserving the Future.

At Yarra Valley Caviar, sustainability isn't simply part of our business—it is a core pillar of our business values

For more than two decades, we have responsibly farmed Atlantic Salmon and Rainbow Trout in the pristine waters of Victoria's Yarra Valley, producing premium Australian Roe while protecting the natural environment that makes it possible.

Every decision we make is guided by a commitment to environmental stewardship, exceptional animal welfare, food safety and responsible aquaculture. By combining traditional farming values with modern technology, we continue to produce a world-class product while safeguarding our waterways for generations to come.

What Guides Us

Our Sustainability Pillars

01

Pure Water

Everything begins with water.

Our farms are supplied by naturally flowing alpine rivers and spring-fed waterways originating in Victoria's High Country. Fresh water continually flows through our ponds before being carefully monitored and returned to the environment.

Maintaining exceptional water quality benefits both our fish and the surrounding ecosystem, ensuring healthy waterways for future generations.

02

Fish Welfare First

Healthy fish produce exceptional roe.

We maintain low stocking densities that allow our salmon and trout to grow naturally with plenty of space and constant fresh water. This reduces stress, supports strong immune systems and promotes outstanding roe quality.

Animal welfare is central to every stage of our farming operation.

03

Ethical Roe Harvesting

Unlike traditional caviar production, our salmon and trout are carefully hand-harvested for their roe once each year using strict animal welfare protocols.

Following the harvest, the fish are returned to their ponds where they continue to grow and naturally produce roe again the following season.

This sustainable approach allows each fish to contribute over multiple harvests while significantly reducing waste and maximising long-term productivity.

04

Naturally Healthy Fish

Our farming philosophy prioritises prevention rather than intervention.

Excellent water quality, low stocking densities and carefully managed husbandry allow us to raise healthy fish without the routine use of antibiotics or unnecessary chemical treatments.

The result is naturally premium roe that reflects the quality of the environment in which it was produced.

05

Complete Traceability

Few producers control every stage of production.

As a fully vertically integrated aquaculture business, we oversee every step—from fertilising eggs and raising juvenile fish through to farming, harvesting, processing, packing and distribution.

This provides complete product traceability, exceptional quality assurance and confidence for chefs, retailers and consumers alike.

06

Environmental Responsibility

Protecting the environment extends beyond our ponds.

We actively monitor water quality, responsibly manage farm operations and continually invest in infrastructure that reduces our environmental impact while improving operational efficiency.

Environmental responsibility is embedded into every aspect of our business.

07

Renewable Energy

Reducing our environmental footprint is an ongoing commitment.

Our farms utilise extensive solar power generation to offset energy consumption, reducing greenhouse gas emissions while supporting more sustainable food production.

As technology evolves, we continue investing in renewable energy and improved efficiencies throughout our operations.

Looking Towards the Future

Sustainability is not a destination—it is a continual process of improvement.

Over the coming years we will continue investing in initiatives that strengthen both our environmental performance and the quality of our products, including:

Expanding renewable energy generation across our farming operations.

Further reducing packaging waste through recyclable and sustainable materials.

Improving water efficiency throughout our production systems.

Investing in new aquaculture technologies that support fish welfare and environmental outcomes.

Continuing independent certification programs and industry best practice.

Our Promise

We believe the finest roe and pearls can only come from healthy fish, pristine water and responsible farming.

By respecting the environment that sustains us, we are able to produce premium Australian caviar with complete confidence in its quality, provenance and sustainability.
