MAGI DASHI Mentsuyu Black (HAMAYA BROTH KURO) 295ml
MAGI DASHI Mentsuyu Black (HAMAYA BROTH KURO) 295ml
100% Plant-Based. Made in Japan, a noodle-sauce counterpart to the white version — deeper, darker and built on Japanese soy sauce, with the same bonito-like savoriness achieved entirely without fish. Kombu dashi, mushroom extract, fermented seasoning and yeast extract are layered over domestically brewed soy sauce to give the long finish that mentsuyu is judged on. It is 100% plant-based, with no animal-derived ingredients, no coloring agents and no added flavorings, which makes a genuinely vegan bowl of soba, udon or somen possible for the first time in most kitchens.
Like its white counterpart, it is made by Hamaya Katsuobushi, an Osaka bonito-flake house founded in 1947. Reproducing the taste of katsuo dashi without katsuobushi is a harder problem than it sounds, and it took a company that has handled bonito for three generations to solve it. Mentsuyu is the more familiar of the two styles abroad — the flavor most people already associate with Japanese noodles — and this one lets plant-based eaters have it without compromise.
How to use this Mentsuyu: A concentrate, diluted to suit the dish. For a cold dipping sauce for soba, somen or tsukemen, use 1 part dashi to 4–7 parts water. For a hot noodle soup, use 1 part to 8–10 parts. For simmered dishes such as nikujaga, oyakodon-style rice bowls or braised vegetables, use 1 part to 10 or more. It also works as a base for tempura dipping sauce, donburi sauce, marinades and glazes. Keep refrigerated after opening and shake well before use.

Raise Your Caviar IQ
1.What Are the Different Types of Caviar?
True caviar is produced from the roe of sturgeon, with each species offering its own distinctive flavour, texture and appearance. At Yarra Valley Caviar, we carefully source a range of premium sturgeon caviars from leading producers around the world, including Beluga, Oscietra, Siberian (Baerii) and Kaluga Hybrid.
Much like fine wine, each variety has its own unique characteristics. Beluga is renowned for its large, buttery pearls and exceptionally smooth finish, Oscietra offers rich, nutty complexity, while Siberian caviar is celebrated for its clean, balanced flavour. Kaluga Hybrid delivers a luxurious, creamy profile with generous, glossy pearls.
The best way to discover your favourite is to experience and compare the different varieties. Whether you're new to caviar or a seasoned enthusiast, exploring each style is part of the journey and allows you to appreciate the unique qualities that make every caviar exceptional.
2.How Should I Serve Caviar?
Serving caviar correctly allows you to experience its full flavour and delicate texture. A few simple steps will ensure every tin is enjoyed at its best.
Keep it perfectly chilled
Always serve caviar straight from the refrigerator. For the ultimate presentation, place the unopened or opened tin on a bed of crushed ice. This keeps the pearls firm, glossy and fresh throughout serving. Avoid leaving caviar at room temperature for extended periods, as this can affect both texture and flavour.
Use a non-metal spoon
To preserve the caviar's delicate taste, avoid serving with silver or stainless steel spoons. Instead, use a mother-of-pearl, horn, bone or other non-reactive serving spoon. Yarra Valley Caviar offers a range of elegant mother-of-pearl spoons designed specifically for serving premium caviar.
Taste it first on its own
Before pairing caviar with other ingredients, enjoy a small spoonful on its own to appreciate its natural flavour profile. Many caviar connoisseurs also enjoy the traditional caviar bump—placing a small amount on the back of the hand between the thumb and forefinger. The gentle warmth releases the caviar's aroma and allows its unique characteristics to shine.
Pair with simple accompaniments
Classic accompaniments such as blinis, crème fraîche and finely chopped chives complement caviar without overpowering its flavour. For a modern twist, caviar is equally at home on potato crisps, warm crumpets or fresh oysters. Pair with chilled Champagne, sparkling wine or premium vodka for a truly memorable experience.
At Yarra Valley Caviar, we believe the finest caviar is best enjoyed simply—allowing the quality of the pearls to speak for themselves.
3.What Drinks Pair Best with Caviar?
The right beverage enhances the delicate flavour of caviar by refreshing the palate and complementing its natural richness. Whether you're celebrating a special occasion or enjoying a quiet indulgence, these classic pairings are always a great choice.
Champagne & Sparkling Wine
Brut Champagne is the traditional accompaniment to caviar, with its crisp acidity and fine bubbles cleansing the palate between each bite. Premium Australian sparkling wines, Blanc de Blancs, Crémant and other dry sparkling styles also pair beautifully, allowing the subtle flavours of the caviar to shine.
Premium Vodka
Served ice cold, premium vodka is a favourite among caviar purists. Its clean, neutral character refreshes the palate without masking the delicate nuances of the caviar. For the best experience, chill the bottle in the freezer before serving.
Dry White Wine
Elegant, dry white wines such as Chablis, Sancerre, Riesling or Sauvignon Blanc provide bright acidity and minerality that complement both black caviar and salmon roe. These wines highlight the fresh, oceanic flavours while balancing the richness of the pearls.
Sake
For a contemporary pairing, premium chilled sake works exceptionally well with both sturgeon caviar and Yarra Valley Caviar's signature salmon roe products. Its smooth, umami character enhances the natural sweetness and complexity of the roe without overpowering it.
At Yarra Valley Caviar, we encourage pairing your favourite caviar with beverages that let the quality of the pearls take centre stage. Whether it's a glass of Champagne, a chilled sake or a premium Australian sparkling wine, the perfect pairing elevates every occasion.
