The eggs are medium to large in size, ranging in colour from dark brown to grey or even olive green, with a glossy appearance. The texture is smooth and creamy, with a delicate pop of flavour on the palate.
Oscietra caviar is renowned for its complex and nutty taste, often described as buttery and rich, with subtle hints of the sea.
