Beef Tartare, Polanco Oscietra Grand Reserve, lavosh crackers


  • Polanco Oscietra Grand Reserve
  • 250g Lean quality beef such as sirloin or rump
  • Fine sliced spring onions
  • Chopped preserved mustard greens ( optional) – available from Asian Grocer
  • Lavosh crackers or any preferred savoury biscuit
  • Horseradish mayonnaise


  • 1 egg yolk
  • 2 tbl spoons light soy sauce
  • 1 tbl spoon Dijon mustard
  • 2 tbl spoon extra virgin olive oil



Finely dice the beef and set aside in the fridge. Make the dressing for the beef by mixing all the above ingredients together until egg yolk has incorporated. Season this with grindings of black pepper. Add the dressing to the chopped beef and incorporate well, mixing this thoroughly. Place a teaspoon of beef tartare mixture onto the lavosh crackers. Top this with a small amount of horseradish mayonnaise. Atop with Polanco Oscietra Grand Reserve caviar.
