Bushfires, drought and the GFC can’t keep a good caviar farmer down. Yarra Valley Salmon, Australia’s only provider of hand-milked Atlantic salmon caviar, has been recognised for its innovative, sustainable agricultural practices at this year’s Sydney Royal Fine Food Show.

The salmon farm is on the fast-flowing mountain waters of the Rubicon River, at the foot of the Victorian Alps and is one of the only freshwater aquaculture farms in the world to use a natural harvesting method. There are no chemicals or antibiotics used and the salmon are gently hand-milked.

Many of Melbourne’s top chefs use Yarra Valley caviar in preference to prestige imported versions. Watch out for Yarra Valley caviar on good restaurant menus.
